The community around Rørosmat has done remarkable work. With more than 35 producers behind it — and in close partnership with the experience and restaurant development teams at Visit Røros og Østerdalen — the cooperative has helped lift the Røros region into the front rank of Norway's locally-produced food destinations. Through our work on sustainable tourism and local food, we've trained our own dedicated guides specialising in local-food experiences. A growing awareness of local ingredients means high-quality dining experiences for both the people who live here and the guests who visit our many restaurants and serving spots.

Rørosmeieriet is Norway's leading organic dairy. Based in Røros, it draws on the rich food traditions of the region and combines them with deep dairy craftsmanship to produce premium quality products — found today in all of Norway's major grocery chains.
"Where the grass grows slowly, the milk is especially good." Rørosmeieriet is Norway's only fully organic dairy, which means every single product it makes is organic. In organic farming, the grass and herbs become rich in nutrients, giving the cows flavour-packed, juicy fodder. The milk is then handled as gently as possible, all the way to the finished product. The organic farmers who supply the dairy place great importance on animal welfare, with care taken to respect the natural needs and behaviour of every animal on the farm.
Rørosmeieriet makes the award-winning Røros Butter and Røros Sour Cream. It's the only producer in the country to hold two Protected Geographical Indications (PGI) — for Tjukkmjølk fra Røros (a traditional Røros cultured thick milk) and Skjørost fra Røros-traktene (a delicate fresh whey cheese from the Røros area). They also produce milk, cream, Røros Yoghurt, cottage cheese and Syrna Blå.

Come along on a guided tour of Rørosmeieriet. Great food is an experience in many senses — and now you can step inside the dairy to see, hear, taste and feel how the products take shape, in tune with the natural surroundings. The tour gives you a glimpse into the dairy's fascinating story, and a brand-new option lets you join a sauce-making class with Rørosmeieriet's own chef. You'll enjoy several tastings along the way, and you might even get to make your own ice cream. The tour is suitable for adults and children aged 6 and over.
Bergstadens Hotel is passionate about letting you taste Røros from the moment you arrive. The menu features arctic char from Tydal and local reindeer and red deer that the team has hunted themselves. The hotel also takes its breakfast seriously — generous, high-quality, and full of local character. Expect local ingredients prepared in a modern style with international touches. Themed weekends celebrate the farm, Sámi traditions, fowl & fish, and wild game.
Everything you eat and drink at Vauldalen Fjellhotell comes from the mountains, and the hotel goes the extra mile to celebrate traditional cuisine. Vauldalen Fjellhotell is genuinely obsessed with good food, and every winter it hosts Mathelg med tradisjoner — a traditional food weekend in the old style, serving dishes from recipes passed down through generations. Each November, the hotel also hosts the Norwegian Championships in rakfisk (a traditional Norwegian fermented freshwater fish), where guests savour rakfisk and its trimmings across an entire weekend. The championship weekend offers a full programme where you can dive into the world of rakfisk, regional traditions, and the rørospols (the traditional Røros folk dance).

Vertshuset Røros has a deep love for regional food and food culture. The kitchen serves beautifully crafted open sandwiches made with local ingredients, small plates, à la carte dishes, and a three-course evening menu — all showcasing the best of local produce, in a setting inspired by the bourgeois parlours of 19th-century Røros. The menu changes each month to follow the seasons. The former gastropub Berkel og Bar is now part of the restaurant, and you're always welcome to drop in for a cold drink or a tapas plate of local cured hams and sausages.
At Røros' oldest café, quality and tradition take pride of place. The menu shifts from daytime to evening, with both offering wonderful local-food experiences in a unique, unhurried atmosphere. During the day, you'll find open sandwiches, small plates and freshly baked treats; from 6 pm, you can settle in for flavour-packed dishes from the à la carte menu. A local tip: always ask about the lunch or dinner of the day.
This is a stunning restaurant inside Bergstadens Hotel. From a beautifully fresh breakfast to a five-course dinner, every plate is built around local ingredients. The restaurant takes its name from the year the main wing of the hotel was completed: 1897.
Grillhuset always builds its menus around local produce. Danish craftsmanship meets French technique and a heartfelt love of Røros — adding up to a meal you won't soon forget. Søberg Gård welcomes you to 500 m² of exhibition space and food experiences, set in the wonderful atmosphere of an old sheep barn. The former cellar has been transformed into rooms that invite a play of light and shadow unlike anywhere else. And up in the stabbur (the traditional Norwegian storehouse on stilts), you'll find local food and a farm shop in the atmosphere it deserves.
Peder Hiort Mathus occupies the old Director's House, a wing of Bergstadens Hotel, right at the bottom of Bergmannsgata. The interiors are filled with antiques and photographs from Røros' history and its mining heritage. The menu is generous, with a strong emphasis on local ingredients.

In 2022, Trøndelag became the first region in Norway to be named a European Region of Gastronomy (ERG). And if there's only one place to visit in Norway for a truly great food experience, it's the Røros region and Østerdalen. Rørosmat has played a pivotal role for the local food producers here.
Together, they've created a modern food adventure — driven by farmers and producers who are passionate about turning the resources around them into something of real value. The result: a chance to enjoy genuinely outstanding food carrying the flavours of mountain, plateau, forest and lake, whether you're sitting down to a dinner in good company or packing tasty treats for the trail.
